Food Innovation @ Abertay (FIA) was asked by Scarlett’s Honey Company to provide product development for a range of flavoured honey’s combined with differing ingredients. Scarlett’s Honey and FIA’s aim was to produce several honey products that not only contained natural flavouring but offered added value by using ingredients such as chocolate chips, freeze dried raspberries and strawberries. FIA was also tasked with providing shelf life analysis and nutritional information for the six new Scarlett’s Honey products. The research and development was funded using the Innovation Voucher scheme run by Interface.
