Dollar Deli requested assistance to develop a premium hot dog using quality ingredients from suppliers who can provide acceptable provenance (i.e. Scottish).  The hot dog was to have a higher than average meat content, be gluten-free, dairy-free, use natural colours and casings and have an acceptable shelf-life for a chilled meat product.  Although the company will sell the hot dog through its own outlets, it was hoped to supply premium food retailers.  Dollar Deli enlisted the expertise of Food Innovation @ Abertay and applied for an Innovation Voucher through Interface to fund the research and development of a recipe, conduct on-site trials to develop recipe scaling up, analyse the product for nutritional content and for consumer acceptability.
